Tradition is at the root of our cuisine.
Our recipes are derived from mountain dishes from Valle d’Aosta. The Champorcher Valley has always been difficult to cultivate, a territory that has fed its peasantry with simple yet nutritious products: chestnuts, rye, potatoes, toma cheese. The cuisine, since ancient times, sees the use of plants and wild flowers: from ajucche (herb) to pine buds, from wild blueberries to dog roses.

Our family is made up of travelers and explorers. This pushes us to look for new combinations, combining the mountains with flavors that come from all over the world. Have you ever tasted elderflowers in batter with chestnut honey and turmeric, or potato gnocchi with leeks, saffron and Timut pepper?

A journey into the past
A past of hard work and stories is a pleasure to share. This is how history joins the Moulin Restaurant. The wood, the stone, the sawmill, the ancient walls of the mill, the recovered furniture, the inherited crockery, and the Damask tablecloths, all tell the story of grandparents driving taxis in Paris or working among the Swiss vineyards, of aunts in the service of Hemingway, and Franciscan uncles on a mission.

Want to try our cuisine?
- Our menu is fixed, and varies by season;
- We are open for dinner every evening, and some days for lunch. Check for our hours or call us.
- If you have special needs (you are vegetarian, you have intolerances, you do not like specific products such as cheese), tell us when you make your reservation. We can adapt the menu to suit your needs.
- If you are interested in one of our dishes in particular (perhaps our mushroom and blueberry risotto), ask us when you make your reservation, and we will do our best to accommodate you.
- Polenta is cooked on Sundays for lunch or on holidays. It is strictly cooked in the cauldron, over a wood fire.
- Our garden is available for an aperitif before dinner, or a little relaxation after lunch.

The ingredients of our cuisine are produced by us or found in the area, km0. Ours is a fruit and vegetable farm, thus the menu focuses on the use of fruits and vegetables, even complementary to meat or pasta dishes, garnished with a particular aroma or fragrance.

As an Agritourism, our wine list is comprised only of wines from Valle d’Aosta. We are always looking for new products, innovative or traditional, natural or conventional.
